I hope you are having a wonderful weekend! April is long gone and I am still remembering this delicious orange cake I made beginning of spring. A dear friend generously offered a basket full of oranges from their garden. At first, I thought I will juice them up but when I saw a picture of an orange cake on Instagram, I decided to make an Orange cake. After a few minutes of internet search for an eggless orange cake recipe and not having found the right recipe yet, I decided to use my simple vanilla cake recipe and add in orange juice instead of water. Sometimes, we just have to experiment in the kitchen to find out, right?
My expectation was to get a well baked cake but surprisingly not only it baked well but also turned scrumptious!! Everyone in the family loved this recipe each time I made it. I was happy that we were able to share this delicious cake with our friends too. As I was editing this picture my daughter told me, “Oh Mamma, that Orange cake was so yummy!! I wish I could have it everyday..” Now that’s a sweet compliment for this mamma 🙂
This is an eggless recipe, but it is still moist with a subtle flavor of orange which is not too over-powering. In this recipe, I am using buttermilk which adds softness and also acts as an egg replacer. I haven’t frosted this cake as this cake is delicious just by itself but you can add the frosting if you wish to do so. One important step while you make any cake is to cream the butter and sugar. I have neglected this step in the past while baking some other cakes and the results are not the same as they are when I use a creamed butter-sugar mixture. You can do so by using a hand blender or a whisk works just as well. This really helps the cake to be soft with a lighter texture.
This Simple Eggless Orange Cake is perfect for a brunch or can also be served with some evening tea. With Mother’s day coming soon this would be a perfect dessert for the occasion.
Now onto the recipe.
Ingredients
- All purpose flour - 1.5 cups
- Granulated Sugar - 1 cup
- Butter - 1/2 cup
- Milk - 1/2 cup
- Buttermilk - 1/2 cup + 2-3 tablespoons if necessary
- Orange juice - 1/2 cup
- Vanilla Extract - 1 teaspoon
- Baking Powder - 1 teaspoon
- Salt - 1/4th teaspoon
- Orange zest from 1 medium sized orange
Instructions
- Preheat the oven to 350 degrees Fahrenheit.
- Grease the cake pan with some butter and set it aside.
- Now, it's time to cream the butter and sugar. Add sugar to the butter and using a whisk or a hand blender beat until fluffy.
- Into the creamed butter and sugar mixture add buttermilk, milk and orange juice one at a time. Keep stirring the mixture gently, until everything is well combined.
- Add the vanilla extract and give the mixture another good stir and set aside.
- Now, sift the flour, baking powder and salt into a separate bowl. These are the dry ingredients.
- Add the dry ingredients into the wet ingredients that you set aside before. Use caution by adding little at a time and giving a good mix before adding the next portion. Mix until everything is well incorporated.
- Finally, add in the orange zest and fold into the batter.
- The cake batter should be thick yet droppable consistency but not too runny.
- Transfer the cake batter into the well greased cake pan and put it in the oven for about 45-60 minutes.
- It is best to check the doneness at around the 45 minutes mark.
- Insert a toothpick to the center of the cake. If your tooth pick comes out clean without sticky batter then your cake is baked.
- Let it cool for a few minutes and then transfer it on a cooling rack to cool down completely.
- Enjoy this delicious cake for a brunch or with your evening tea !

Hi, i see that you added orange juice in place of water. I searched your site for the simple vanilla recipe to see if the measurements are the same for water. Are they? Or should I increase the amount of buttermilk?
